Raised Doughnuts

1 cake yeast
1/4 cup lukewarm water
1 cup scalded milk
1 tsp salt
3/4 cup sugar
2 tbsp butter or margarine
3 1/2 to 4 cups flour
1 egg
1/2 tsp nutmeg


Soften yeast in lukewarm water. Add scalded milk to salt,sugar and butter. When lukewarm, add soften yeast. Add 1 1/2 cups of the flour. Allow to stand in warm place until the sponge is so light that it will fall at the slightest touch.

Add beaten egg, mutmeg and remainder of the flour. Knead lightly. The dough should be softer than bread dough. Cover and let raise again in warm place. Toss lightly on floured board(use as little flour as possiable) and roll 3/4 inch thich.

Cut with doughnut cutter and let rise until nearly double. putting the raised side ot the doughnut down in the deep hot fat, fry 2 to 3 minutes, turning only once.
