Spiced Baked Doughnuts
Makes 11 doughnuts

11/2 cups all-purpose flour
1/2 cup plus 1 tablespoon sugar
11/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup low-fat milk
1/4 cup melted margarine
1/4 cup frozen egg substitute, thawed
1/2 teaspoon vanilla
2 tablespoons confectioners' sugar


Preheat oven to 400 degrees.

Combine flour, sugar, baking powder, cinnamon, nutmeg and salt in a large bowl. Make a well in the center of the dry ingredients.

Blend together milk, melted margarine and egg substitute. Blend milk mixture into dry ingredients, stirring just until moistened.

Spray a Bundtlette pan (a pan with 6 one-cup fluted muffin cups) with nonstick spray coating. Spoon 2 heaping tablespoons of batter into each cup. Reserve remaining batter for another batch. Smooth top of batter evenly with a knife.

Bake 12 minutes or until a wooden pick inserted in center comes out clean. Remove from pan immediately and place on a wire rack to cool.

Repeat procedure with remaining batter. Sprinkle confectioners' sugar over doughnuts; serve
doughnuts warm or at room temperature.

Note: Make baked doughnut holes if desired or if specialty pan is not available. Spray a
mini-muffin pan with nonstick coating. Divide dough evenly between 22 mini-muffin cups. Bake
at 400 degrees for 10 minutes.
