Fruit Dumplings
From So Fat, Low Fat, No Fat

Dough:
1 cup all-purpose flour
3 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/3 cup low-fat buttermilk
1 tablespoon Butter buds, liquid form
1 tablespoon canola oil

Fruit Mixture:
2 pints any fruit
1/2 cup sugar
4 teaspoon lemon juice
1/2 teaspoon ground cinnamon mixed with 1 tablespoon sugar


To make dough; mix the flour, sugar, baking powder, soda, and salt.

In a small bowl mix the buttermilk, Butter Buds, and oil. Make a well in the center of the flour mixture and add the liquid mixture, mixing just until combined. Set aside.

Make the fruit mixture. In a heavy skillet combine the fruit, sugar, and lemon juice with 1/4 cup water. Toss gently, cover, and bring to a boil. Reduce the heat to low; remove the cover.

Drop dumpling batter by spoonfuls evenly over the simmering fruit. Sprinkle with cinnamon sugar mixture, Cover the pan tightly with a lid or foil and cook for 15 to 17 minutes, or until dumplings are firm to the touch. Serve with fat-free yogurt or ice cream.
