Caramel Flan

Caramel Flan

1 C sugar
1/2 C water
6 eggs
6 TBSP.P sugar
1 tsp vanilla
1 can evaporated milk and enough whole milk to make 2 1/2 C

Preheat oven to 350.

In a small saucepan stir sugar and water together and bring slowly to a boil. Let boil undisturbed until it carmelizes. As soon as syrup turns an amber color stir and remove from heat. Working quickly, pour immediately into a 9" cake pan and swirl to cover bottom and sides.

In a blender combine eggs, 6 TBSP.P sugar, vanilla and milk mixture. Blend till well combined. Pour over caramel.

Bake in a water bath for 1 hour. Custard should be set and a knife off center of middle should come out clean. Let cool then chill.

To serve run a knife around edge and invert onto a deep serving plate.
