Cocada Imperial Coconut Flan

2 c Milk
3/4 c Granulated sugar
1 Small coconut
5 Small eggs, separated
Pinch salt
Flan mold coated with Caramel


Preheat oven to 450F.

Place sugar and milk in a large heavy saucepan and melt sugar over low heat, then raise heat and boil mixture briskly. As soon as mixture begins to thicken, stir to prevent it from sticking to bottom of pan. After about 30 minutes it should be consistency of thin condensed milk and reduced to 1 cup. Set aside.

Pierce holes through two of "eyes" of coconut and drain milk from it. Reserve coconut milk.

Put whole coconut into oven for about 8 minutes. Crack coconut open; flesh should come away quite easily from shell. Pare brown skin from coconut flesh with a potato peeler. Grate coconut finely. You will need 2 1/4 cups, loosely packed, for flan.

In a saucepan, add grated coconut to reserved coconut milk and boil for about 5 minutes, stirring constantly. Add reserved sugar-milk mixture and continue cooking for another 5 minutes. Set mixture aside to cool.

Beat egg yolks together until they are creamy and stir them well into coconut mixture. Beat egg whites until they are frothy, add salt and continue beating until they are stiff. Fold into coconut mixture.

Pour mixture into prepared mold. Cover mold with a well greased lid and place into a water bath. Cook flan on lowest shelf of oven for about 1 1/2 hours, then test to see if it is done. When it is done, set it aside to cool.

Makes 6 servings.
