Creamy Peach Melba Flan

1 package (16 ounces) pound cake mix
1/4 cup orange juice
1 tablespoon orange zest
2 containers (6 ounces each) low-fat peach yogurt
1/2 cup cold skim milk
1 package (5.1 ounces) vanilla instant pudding
1 container (8 ounces) frozen nonfat whipped topping, thawed
4 fresh peaches, peeled and pitted
1 cup fresh raspberries
1 cup orange marmalade


Preheat oven to 350 degrees. Lightly spray two flan pans with cooking spray. Place Parchment Circle in bottom of each pan.

Prepare pound cake mix according to package directions, substituting orange juice for 1/4 cup liquid. Stir in orange zest. Divide cake batter between pans.

Bake 20-25 minutes or until Cake Tester inserted in cake comes out clean. Cool 10 minutes. Turn out onto rack cool completely.

Meanwhile, in bowl, combine yogurt and milk using whisk; mix until smooth. Whisk pudding mix into yogurt mixture stirring until pudding is dissolved. Whisk in whipped topping; mix well. Divide pudding mixture evenly between cooled cakes.

Slice peaches. Top each flan with peach slices and raspberries. Lightly brush orange marmalade over top of fruit using Pastry Brush.
