Sunny Citrus Flan 
2 yellow flan cakes, prepared from commercial mix and baked in Tiara pans
Zest from 1 lemon 
1 Tbsp lemon juice
1 package (3.4 ounces) instant lemon pudding mix 
1 cup milk 
1 container (12 ounces) frozen whipped topping, thawed and divided 
2 kiwis, cored, peeled and sliced
1 banana, sliced 
1/2 cup lemon-lime soda 
1 can (8 ounces) mandarin orange slices, drained 
Combine lemon juice, pudding mix and milk in bowl with whisk.  Fold in 2 cups whipped topping.  
Divide and spread mixture between two prepared cakes. 
Dip banana slices in lemon-lime soda to prevent browning.  
Top pudding mixture with kiwis, banana and mandarin orange segments. Sprinkle lemon zest over fruit.  
Decorate flans with remaining whipped topping.
