Mango Flummery

2 Lg Mangos -- peel, slice
2 Tbsp Lemon Juice
1 C Orange Juice
2/3 C Sugar -- or substitute
1/3 C Tapioca -- quick cooking kind
1/2 Tsp Orange Peel -- grated

In a blender or food processor, whirl mangoes until pureed; you should have 3 C. Transfer puree to a 3 qt pan. Stir in lemon juice, orange juice, sugar, and tapioca. Let stand for 5 min.; then bring to a full boil over med-high heat, stirring constantly. Remove from heat; stir in orange peel. Let cool for 15 min.; cover and refrigerate until softly set (about 2 hrs). To serve, spoon flummery into 4 - 6 servings.
