Passionfruit Flummery
1 sachet (3 teaspoons) gelatine
1/2 cup sugar
2 tablespoons flour
1 cup water
1 cup fresh orange juice
1/3 cup fresh passionfruit pulp
Put gelatine, sugar and flour into a saucepan then add some of the measured water to blend. Gradually add the remaining water and stir until mixture boils. Reduce heat and simmer for a minute then pour into a large mixing bowl and let cool. Add orange juice and passionfruit pulp. Refrigerate until mixture starts to set around edges. Whip with mixer until thick -- 5 to 10 minutes. Pour into individual serving dishes and chill. Serve with pouring cream.
