Fondue Chocolate

Chocolate Fondue

1 1/4 cups whipping cream
3 tablespoons milk
1 vanilla bean
1 lb. semisweet chocolate, finely chopped
1 banana
3 apples
4 slices fresh or canned pineapple
1/2 pint strawberries


Place cream and milk in top of a double boiler. Split vanilla bean lengthwise and scrape seeds into mixture. Place boiler insert over direct heat and slowly heat until just at boiling point. Remove from heat, discard vanilla bean and stir in chocolate until melted and smooth. Keep fondue warm by placing insert over lukewarm water.

Cut fruit into large slices or chunks, depending on type of fruit. Leave strawberries whole.

To serve, skewer a mixture of fruits for each person and serve with a small dish of fondue on each individual plate.

Alternatively, serve fondue in center of table with fruit and allow each person to dip on piece of fruit at a time into fondue.

Note: Vary fruit selection to take advantage of each season.
