Frozen Lemon 'Pie'
4 eggs, separated
1/8 teaspoon salt
juice of two lemons
grated rind of one lemon
3/4 cup sugar
1 teaspoon vanilla
1 cup heavy cream
Combine four well beaten egg yolks, salt, lemon juice, lemon rind and sugar in top of double boiler. Stir constantly until quite thick. Cool, stirring occasionally Add the vanilla.
Beat the egg whites until stiff. Whip the cream until stiff. Fold the egg whites and cream into the lemon mixture.
Crush enough vanilla wafers to cover the bottom of a 9x4" bread pan. Add mixture, top with a few more crumbs. Freeze a few hours.
