Peachy Cookies and Cream Freeze

Butter flavored non stick spray coating
1 Cup coconut macaroon cookie crumbs
4 Medium peaches -- to 5 peeled
1 Cup sugar
1 Tablespoon lemon juice
1/4 Teaspoon almond extract -- optional
1 Cup whipping cream -- whipped


Lightly spray a 9x5x3-inch loaf pan with non-stick spray coating. Spread half of the macaroon crumbs on the bottom of the pan.

In a blender container, puree enough of the peeled peaches to make 2 cups (mixture should be slightly chunky). Combine the peach puree, sugar and lemon juice. Add almond extract, if you like. Fold in the whipped cream. Pour the mixture over the crumbs in loaf pan. Top with the remaining crumbs. Cover. Freeze for 6 to 24 hours or till solid.

Makes 10 servings

NOTES : Macaroons, peaches and whipped cream blend for a make-ahead dessert that waits in the freezer. Audrey Winchell of Mercer, Wisconsin (140 miles east of Duluth, Minnesota), whipped up this frosty delight. It's a specialty when she entertains in her north-woods home.
