Pineapple Squares
Crust:
3 cups of graham wafer crumbs
1/2 cup of butter or margarine
Filling:
1/2 cup of butter
1 and 1/2 cups of icing sugar
2 egg yolks
Topping:
1/2 pint of whipping cream, stiffly beaten
1 cup of well drained crushed pineapple
Combine wafer crumbs and butter. Press in a 8x8 or 9x9 pan and bake 10 or 15 min.
Mix together filling ingredients; spread on top of crust. Combine topping ingredients and spread over filling.
Sprinkle a few reserved crumbs on top and put in the freezer for at least 3 hours. There should still be ice crystals on the topping when served.
