Toffee Ice Cream Dessert

Yield: 15-18 servings.
Prep: 15 mintues
Freeze: Several Hours until Firm
3 cups cream-filled chocolate sandwich cookie crumbs
2 tablespoons butter or margarine, melted
1/2 gallon vanilla ice cream, softened, or frozen yogurt
1 (7/5 oz) package almond brickle chips
Commercial fudge topping, warmed
Frozen whipped topping, thawed
Maraschino cherries (optional)
Preheat oven to 350.
Combine cookie crumbs and butter, stirring with a fork.
Press firmly into bottom of a lightly greased 13 x 9 x 2 inch baking dish. Bake for 5 minutes. Let cool.
Spread half of ice cream over crust; sprinkle with half of brickle chips.
Repeat layers.
Cover and freeze until firm.
Cut into squares to serve.
Top each serving with fudge sauce, a dollop of whipped topping, and if desired, a cherry.
