Pumpkin Dessert Squares
2 c. canned pumpkin (1 lb. can)
1 c. sugar
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. ginger
1 c. chopped pecans (toasted if desired)
1/2 gal. vanilla ice cream, softened
36 gingersnaps, crushed fine
Combine pumpkin, sugar,salt and spices. Add pecans. Place softened ice cream in large bowl. Fold in pumpkin mixture.
Line bottom of a 9x13 pan with half of the crushed gingersnaps. Top with half the pumpkin/ice cream mixture. Cover with remaining gingersnaps. Add remaining pumpkin/ice cream mixture.
Freeze until firm, overnight or at least 5 hours. Remove from freezer 10 minutes before serving. Garnish with
whipped cream and chopped pecans.
