Baked Stuffed Peaches

4 firm but ripe peaches
8 Vanilla wafers, crushed
1 egg beaten
1/4 Cup chopped walnuts
2 Tbls. light brown sugar
1/2/ tsp. vanilla

Preheat oven to 350 degrees. Cut peaches in half, remove pit, arrange cut side up in a buttered 11/2 quart baking dish. In a bowl, mix remaining ingredients, mound about 2 Tbls. of filling in each peach. Bake 15-20 min until topping is cooked through and lightly browned, and peaches are soft but still hold their shape. Serve warm or at room temp. With a scoop of vanilla ice cream, optional.
