Homemade Lemon Curd

6 egg yolks
1 cup sugar
1/2 cup fresh lemon juice
1/2 cup (1 stick) butter
1 tablespoon lemon zest

Stir and cook the first 3 ingredients for 10 to 12 minutes, stirring constantly until it coats spoon. Don't allow to boil.

Remove from the heat and add butter, cut in small pieces. Whisk in. Add lemon zest (peel). Pour into a sterile jar and refrigerate.

Makes 1 pint
