Strawberry Sponge Roll

4 eggs
3/4 teaspoon baking powder
1 pinch salt
3/4 cup sugar
1 teaspoon vanilla
3/4 cup flour
confectioners sugar
1 1/2 cups whipping cream
4 tablespoons sugar
sliced, strawberries

Preheat oven 350 degrees. Spray a 15"x10" jelly roll pan well with cooking spray. Lightly dust with flour.

Beat eggs, Baking Powder and salt. Gradually beat in sugar. The mixture should form a ribbon as it drops from the beaters. Spread evenly into prepared pan. Bake for 13 minutes or until lightly golden.

Sprinkle a dish towel with sifted confectioners sugar. Turn cake onto towel and gently roll up starting from short side. Keep rolled up until cooled completely.

Meanwhile Beat together whipping cream and sugar until stiff peaks form. Cover and store in refrigerator until cake is cooled.

Unroll cake and spread evenly with filling. Layer evenly strawberries on top of whipped filling. Roll up. Lay seam side down on serving platter. Dust with sifted confectioners sugar. Cover and chill until ready to serve.
