Lemony Cheese Whip

2 boxes sugar-free lemon flavored gelatin (enough to make 4 cups as per instructions)
8 oz. cream cheese, softened and cubed
1/2 Cup heavy cream
1/2 Cup orange flavored seltzer water (zero carb)
2 teaspoons coconut extract
2 packets artificial sweetener (optional)

Heat 2 cups water to boiling.

While water is heating, whip cream, coconut extract and sweetener in a bowl until you have stiff peaks. (If for some reason whipped cream turns out more like a butter consistency, it's no problem-just keep going). Set aside.

In another bowl pour boiling water and start mixing beaters on low. Add gelatin and mix on low until totally dissolved. Add cubed cream cheese and mix thoroughly. Add whipped cream mixture and seltzer and mix on a higher speed (enough to get some foam but not high enough to slop it around kitchen) until thoroughly mixed.

Transfer to a glass bowl, cover with plastic and refrigerate until firm (couple hours).
