Marlene's Jello

1 (6 oz.) pkg. Jello
2 cups boiling water
1 cup cool liquid (juices from fruits + water)
1 (20 oz.) can pineapple
1 (20 oz.) can apricots or peaches

Topping:
1 cup reserved fruit juice
1/2 cup sugar
3 tbl. flour
1 egg yolk
2 tbl. butter


Dissolve Jello in boiling water and juices. Stir in pineapple and apricots; refrigerate until firm. For topping, cook and stir until thickened and bubbly the reserved fruit juice, sugar and flour. In a small bowl beat egg yolk with a fork. Stir some of the hot mixture into this, then put all back into the pan and continue to cook 30 seconds. Add butter and cook a little longer, until melted. Let cool a little while then add Cool Whip. Spread on Jello and continue to refrigerate.
