Chi Chi's Fried Ice Cream 
1/2 Gallon French vanilla ice cream 
3 Cups cornflake crumbs 
3 Tablespoons sugar 
1 Tablespoon cinnamon 
3 eggs 
6 Tablespoons milk 
hot oil 
For finishing touch: 
1 Tablespoon honey (for each sundae) 
whipped cream 
maraschino cherries 
  
Using 24 cupcake tins, grease with oil or spray with Pam. Put a scoop of ice cream in each tin, about 1/2 cup in each. Try to make the scoop as round as possible. Freeze until hard, at least an hour. 
Crush corn flakes, mix with sugar and cinnamon and set aside. Beat eggs with milk 
Working very quickly , roll ice cream balls in cornflakes, then in eggs and milk. Repeat. Freeze again for several hours. 
Heat 2" of oil to about 385 degrees. Dip ice cream in oil for 3 seconds. (three only). Put coated ice cream balls in parfait glasses. Drizzle 1 tablespoon honey over each ball. Decorate with canned whipped cream and a cherry.
