Almost-Classic Cherry Clafouti

4 eggs
3/4 cup sugar
1 cup milk
1 tbl Cognac or rum
2 tsp vanilla
3/4 cup flour
pinch of salt
1 lb sweet cherries, pitted ( frozen dried, or canned can be used)

Preheat oven to 375 degrees. Butter a (10") deep dish pie pan. Beat eggs and sugar until frothey, about 2 min. Add milk, Cognac,and vanilla; beat until smooth. Stir in flour and salt.

Distribute cherries over the bottom of prepared pan. Pur batter over cherries and place pan on baking sheet. Bake 10 min.; reduce to350 degrees and bake until top has puffed (sinks on cooling) and wooden pick inserted in middle comes out clean; 35 min. Transfer to rack and cool 20 min. Dust with powdered sugar. Serve in wedge
