1 c diced fresh pineapple, (1/2 inch pieces)
2 c diced strawberries (1/2 inch dice)
1 c diced mango (1/2 inch dice)
2 tbsp minced candied ginger OR 2 tsp fresh ginger
2 tbsp fresh lime juice, or to taste
2 tbsp packed light brown sugar, or to taste
1/2 c slivered fresh mint leaves
Combine all ingredients in a nonreactive mixing bowl and gently mix together. Adjust lime juice or brown sugar, if desired.
Ingredients may be prepared ahead of time but do not mix together more than 10 minutes before serving.
Author notes: This can be a great accompaniment to cakes and pastries or enjoyed by itself. Fruits may be varied. Dried cherry biscotti or tortilla crisps go well with this.
