Four Egg Pavlova
4 egg whites
1 cup castor sugar
1/2 tspn vanilla essence
1/2 tspn vinegar
Beat the egg whites until soft peaks form,add 1/3rd cup of the sugar and beat until dissolved,gradually add rest of the
sugar and continue beating (need a good electric cake mixer for this job) for 5 minutes.
Add vanilla and vinegar and beat one minute longer. Put a sheet of baking paper on the glass turntable and spoon
mixture onto the paper and shape into a circle aprox 2-3 inches high.
Cook on high (100%) for 2 minutes. Open oven door and allow pavlova to stand in the oven for 10 minutes with door
open,cooling a little then put a piece of baking paper on top of the pavlova the cooling rack on top of that and turn it over then transfer to a plate.
When cold decorate with whipped cream and sliced kiwi fruit or whatever your preference.
