Pineapple Fluff
Crust:
1/2 pound butter or margarine softened
2 tablespoons sugar
1-1/4 cup flour
Filling:
1 # 2 can (1 lb. 4oz) crushed pineapple
1-1/4 cup sugar
2 heaping tablespoons cornstarch
4 egg whites
For crust, preheat oven to 350 degrees.
Grease a 9x13 pan.
Cream butter and sugar well, add flour and mix.
Press dough into bottom and up sides.
Bake at 350 degrees for 25 to 30 minutes.
For filling,
cook pineapple, sugar, and cornstarch until thick.
Stir occasionally.
Cool.
Beat egg whites until stiff.
Fold into cooled pineapple mixture.
Pour into crust and bake at 350 degrees for 15 to 20 minutes.
