Bittersweet Chocolate-Orange Mousse

Bittersweet Chocolate-Orange Mousse (tofu)
Serves 8

2 (12.3 ounce) aseptic packages of extra-firm silken tofu
8 ounces bittersweet chocolate
1/3 cup orange marmalade
zest of 1 orange
2 Tablespoons orange juice
2 Tablespoons orange-flavored liqueur, such as Triple Sec, Curacao or Mandarine
1 teaspoon vanilla


Rinse and drain the tofu in a colander and set aside for about 10 minutes.

Meanwhile, soften the chocolate in a double boiler set over simmering water.

With a paper towel, pat dry the tofu and put it in a blender or food processor. Puree until creamy, about 15 seconds. Add the marmalade, orange zest, juice, liqueur, and vanilla. Puree until smooth. Add the melted chocolate, and process until well blended, scraping down the bowl once or twice.

Transfer to individual serving dishes or a couvered container and chill. The mousse can be made up to 4 days ahead.
