Chocolate Mousse

Chocolate Moose

8 ounces bittersweet chocolate
4 eggs, separated
Zest of an orange

In heavy saucepan, melt chocolate over very low heat. Add egg yolks, one at a time, beating well after each. Add half of the orange zest.

In another bowl, beat egg whites until stiff peaks form. Fold a little of the chocolate into the whites, then fold in the rest of it. Pour into little serving dishes. Chill several hours. Sprinkle with the rest of the orange zest. Serves 4.
