Chocolate Mousse

1/2 Pound Sweet Chocolate Squares
6 Large Eggs, Separated
3 Tablespoons Water
1/4 Cup Sweet Liqueur (Amaretto or Grand Marnier)
2 Cups Whipping Cream
6 Tablespoons Sugar

Cut chocolate in half inch pieces and place in double boiler over simmering water. Cover and melt over low heat.

Place egg yolks in heavy saucepan with water and heat over very low heat while beating constantly with a wire whisk. When yolks thicken, add liqueur, beating constantly, until sauce is thickened; remove from heat.

Add melted chocolate to sauce and fold in. Scrape sauce into a mixing bowl. Beat cream until stiff, adding 2 Tbsp sugar as cream stiffens. Fold cream into chocolate mixture.

Beat egg whites until soft peaks form. Beat in remaining sugar and continue beating until stiff. Fold egg white mixture into mousse mixture.

Spoon mousse into a serving bowl and chill until ready to serve. Garnish with whipped cream and grated chocolate.
