Coconut-Cherry Cheesecake Parfaits
1 (3-1/2 oz.) pkg. instant coconut cream pudding mix 
1 pint sour cream 
1 (8 oz.) pkg. cream cheese 
1/4 cup sugar 
2 tsp. almond extract 
1 tsp. vanilla extract 
1 (21 oz.) can cherry pie filling 
3-1/2 oz. shredded coconut 
whipped cream (for garnish; optional) 
 
Combine pudding, sour cream and cream cheese; whip until smooth.  
Slowly add the sugar and extracts. 
Spoon into 8 (6 ounce) parfait glasses until almost 1/2 full.  
Spoon in a layer of cherry pie filling, reserving 8 cherries for garnish.  
Spoon remaining pudding mixture onto cherry layer.  
Surround rim of parfait glass with whipped cream.  
Place flaked coconut in middle and top with a cherry.
