Apple Parfait Pudding

Pudding:
6 cups chopped apples (about 9 apples, peeled and cored)
1/4 cup cornstarch
lemon juice
cinnamon to taste
nutmeg to taste

Topping:
1 cup chopped walnuts


Put half of the chopped apples in a blender and blend with cornstarch. Combine lemon juice and spices to taste. Pour into top of a double boiler and cook over medium heat, stirring until mixture reaches a boil and thickens. Add remaining chopped fruit and cook until just tender. Cool.

Layer pudding and chopped nuts in tall dessert glasses ending with nuts. Chill and serve. Top with whipped topping if desired. Serves 6.
