1 1/2 cups coconut milk
4 tablespoons sugar
2 tablespoons cornstarch
1/2 cup water
1 teaspoon vanilla extract
2 drops red food coloring
Peel the bananas and cut in 2 inch lengths. Cook in the coconut milk till very soft. Add sugar and mash smooth. Mix the cornstarch and water, stir into the banana mixture. Cook over low heat, mixing steadily till thickened. Add the vanilla and coloring. Pour into 6-8 sherbet glasses. Chill.
Serve with whipped cream or coconut cream.
