Banana Pudding from Scratch

3/4 cup sugar
1/3 cup flour
1/8 teaspoon salt
2 eggs, well-beaten
3 bananas (medium to large), sliced
2 cups evaporated milk
1/2 teaspoon vanilla
2 tablespoons butter
35 vanilla wafers
Meringue (see recipe below)


In the top of a double boiler, combine butter, sugar, salt, flour, and eggs. Slowly add milk, stirring constantly. Cook over hot water until thick and smooth. Add vanilla.

Preheat oven to 425 degrees F.

Prepare pudding in a 1-1/2 quart casserole dish, as follows. Spoon one-fourth of the pudding into casserole. Cover with a layer of vanilla wafers, then a third of the banana slices, then a third of the remaining pudding. Layer everything twice more.

Make meringue by beating two egg whites to soft peaks, then adding 1/4 cup sugar and beating to stiff peaks. Spoon meringue over pudding, spreading to seal edges. (If needed, increase recipe to ensure a generous covering of meringue. Otherwise, it will shrink back from the edges of your casserole as it browns in the oven, leaving gaps over the pudding.) Bake until meringue is light brown, about 5 minutes. Serve warm or cold. Refrigerate leftovers. Serves 8.
