Banana Pudding
3/4 cp sugar
2 Tblsp cornstarch
pinch of salt
2 cp milk
4 egg yolks, slightly beaten
1 tsp vanilla extract
1 cp whipped cream (or Cool Whip, thawed)
5 ripe bananas, peeled and sliced
Mix first 3 ingredients in a double boiler. Slowly add milk and cook, covered, over boiling water for 9 min, without stirring.
Uncover and cook for 9 more min. Add egg yolks and stir while cooking for 2 more min. Cool; then add vanilla. Fold in whipped cream.
Either fold in bananas or place bananas in individual serving bowls and top with pudding. It's also good to line a
casserole dish with vanilla wafers then alternate layers of pudding and bananas; beginning and ending with pudding.
