Pudding: Butterscotch Farina Pudding

Butterscotch Farina Pudding

2 cups milk
1/3 cup Quick Cream of Wheat
1/3 cup light brown sugar, firmly packed
2 eggs, beaten
1/4 teaspoon salt
2 tablespoons butter or margarine
Additional milk, optional

Place the first five ingredients in a medium saucepan and mix well. Bring to a rapid boil over medium heat, stirring constantly. Reduce heat and cook 5 minutes, stirring frequently. Add butter; cover and remove from heat. Let stand a few minutes, then stir to blend in butter. Serve hot with milk, if desired.

Makes 4 (about 2/3 cup) servings.
