Pudding: Cherry Cottage Pudding

Cherry Cottage Pudding

1 (No. 2) can sour (tart) cherries
1/4 c. butter
2/3 c. sugar
1 egg
1/4 tsp. almond extract
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
1 c. buttermilk


Drain cherries; save juice. Cream butter and sugar. Add eggs and flavoring and beat well. Add flour and other dry ingredients, alternating with buttermilk. Bake 45 minutes in a
350 degrees oven.

Sauce:
1 c. cherry liquid
1/4 c. sugar
1 Tbsp. cornstarch
1 Tbsp. butter

Mix sugar and cornstarch. Add to hot cherry juice. Cook on low heat until thick and clear. Add butter. Spoon on cake as serving.
