Chocolate Cornstarch Pudding 
3 cups milk 
3 squares (3 ounces) unsweetened chocolate 
1/4 cup cornstarch 
1/2 cup sugar 
1/4 teaspoon salt 
1 1/2 teaspoons vanilla extract 
Combine unsweetened chocolate and 2 2/3 cups milk in a saucepan. Heat, stirring to melt the chocolate. Scald the milk. 
Mix cornstarch, sugar and salt. Then stir in remaining 1/3 cup milk until smooth. Add to scalded milk and cook over low heat, or in top part of double boiler over boiling water, stirring constantly, until thickened. Continue cooking about 5 minutes, or until cornstarch is completely cooked. Cool slightly, add vanilla, and pour into serving dish or dishes. 
Makes 6 servings.
