Eclair Pudding

Graham crackers
Can of chocolate icing
Large package of instant vanilla pudding
Cool Whip topping
Chocolate curls or sprinkles (optional)

Prepare pudding according to directions, then set aside.

Cover the bottom of a square serving dish with a layer of crackers after spreading each cracker with chocolate icing. Pour 1/2 pudding over crackers. Add another layer of iced crackers, then cover with the rest of the pudding. Top it off with a nice thick layer of Cool Whip. Garnish with chocolate curls or sprinkles.
