Pudding: Hot Fudge Pudding

Good Housekeeping Jan 2002 and was sent in by Laura Felley, age 13.
Hot Fudge Pudding
Prep Time 15 Minutes - Bake 30 Minutes - Serves 6

1 c all purpose flour
2/3 c granulated sugar
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 c unsweetened cocoa
1/2 c whole milk
2 TBSP melted butter or margarine
1 tsp vanilla extract
1 c packed brown sugar


Preheat oven to 350. Grease 8"x8" glass baking dish or shallow 2 quart casserole.

In medium bowl, combine flour, granulated sugar, baking powder, salt, cinnamon and 1/4 cocoa. Whisk in milk, butter and vanilla just til smooth and spread into baking dish.

Mix brown sugar and 1/4 c cocoa, sprinkle evenly over batter. Pour 1 1/2 c boiling water over batter - do not stir. Bake 30 minutes, it separates into cake and pudding. Serve with ice cream (optional).
