Panettone Toffee Pudding
175g/6 oz unsalted butter
6 tbsp golden syrup
175g/6 oz dark muscovado sugar
4 large bananas, peeled and cut into 2.5 cm pieces
200ml/7 fl oz milk
200 ml/7 fl oz double/heavy cream
450g/1 lb panettone or any light fruited cake, cut into 2cm thick slices
Preheat oven to 190C/375F/Gas 5.
Melt butter in a pan with golden syrup and muscovado sugar.
Let it bubble for 5 minutes.
Add banana pieces and cook for 5 minutes more until softened.
In a bowl, mix together milk and cream.
Dip panettone slices into mix and arrange half of them in an ovenproof dish, then pour over banana mixture.
Repeat with remaining panettone and bananas.
Bake for 20 minutes until top is golden and bubbling.
Leave to rest in a low oven until ready to serve.
