Pudding Persimmon

Persimmon Pudding

2 cups flour
1/2 tea. salt
1 tea. soda
1 cup persimmon pulp
1/2 cup sugar
1/2 tea. cinnamon
1/2 cup milk
1 tea. vanilla
1/2 cup nuts, chopped
1/2 cup raisins, chopped


Sift flour, salt, soda and cinnamon together. Pass the persimmon pulp through coarse sieve and add the sugar and vanilla. Add the flour mixture alternately with the milk. Add the nuts and raisins and mix well. Turn into buttered pudding dish, place in a pan of hot water and bake at 350 for 1 hour. Serve hot with lemon sauce, if desired.
