Persimmon Pudding 
1/2 cup butter 
4 - 6 tablespoons of sugar (according to taste) 
 
 
 
 
1 pint persimmons (after run thru sieve) 
3 egg yolks, well beaten 
 
 
 
 
 
2 1/2 C flour 
2 heaping tsp. baking powder 
1 tsp. nutmeg 
1 tsp. cinnamon 
1 tsp. salt 
1 pint milk
3 egg whites, stiffly beaten
Cream butter and sugar. Add persimmons and egg yolks; mix until well blended.
Sift together all dry ingredients.  Alternately add dry ingredients and milk;
mix well. Fold in egg whites.
 
Bake in greased and floured muffin tins or a cake pan at 375 degrees for 30-40 minutes.  
The pudding will rise, then shrink.
