Rum Pudding
3 egg yolks
6 Tbsp. sugar
1 Tbsp. gelatin (unflavored)
3/4 c. cold water
2 Tbsp. rum
1 c. whipping cream, whipped
salt
Beat eggs and sugar well. Add flavoring. Soak gelatin in cold water. Dissolve over hot water and add to eggs.
When mixture begins to thicken, whip cream and add.
Serve with a sauce made of sweetened fruit juice mixed with a small amount of cornstarch. Cook until slightly thickened.
Cool.
Rum Pudding
2 eggs
1 small pkg. chocolate bits
2 Tbsp. strong coffee
3/4 c. scalded milk
2 Tbsp. dark rum
Pour all ingredients in blender and buzz until smooth. Pour into individual serving dishes and chill
Garnish with dollop of whipped cream. Serves 4.
