Favorite Rice Pudding

1 c. rice
2 c. water
1/4 c. sugar
1 qt. whole milk (but have used 1% milk)
1/2 c. sugar
2 eggs
4 TB flour
6 TB sugar
1 c. whole milk (or other)
2 ts. vanilla
raisins, to taste, if desired
cinnamon or nutmeg, if desired


Cook rice with water and sugar according to pkg. directions (long-grain, please; no minute rice).

Meanwhile, in 2 qt. saucepan, scald 1 qt. of milk; add 1/2 c. of sugar to this; stir to dissolve.

In a separate mixing bowl, beat together the eggs,flour, 6 TB sugar, 1 c. of milk & vanilla until smooth. (Make sure there are no flour lumps!)

When milk (step 2) is hot enough (foamy on top about 15 min. over medium-high heat), add egg mixture stirring in well. Then, add the cooked rice. Add raisins, if desired.

Cook over medium heat about 5 min., stirring constantly until mixture is thick like pudding & just starts to boil. Remove from heat. Pour into Pyrex dish or casserole that has been sprayed with Pam.

Sprinkle top with cinnamon or nutmeg; refrigerate until firm.
