Burnt Sugar Syrup

2 cups granulated sugar
1 cup boiling water


In a heavy skillet that heats uniformly, pour in sugar. Melt the sugar over low heat, stirring constantly with a wooden spoon to prevent scorching. When sugar becomes a clear brown syrup, remove from heat.

Slowly stir in boiling water. Return mixture to low heat and stir until the syrup is smooth again. Cool. Pour into a clean pint jar. Cover tightly and store at room temperature. Will keep for 6 to 8 weeks. Makes 1 1/3 c syrup.
