Sorbet: Melon Sorbet

Melon Sorbet

2 melons (or whatever fruit you prefer)
2 cups of spring water
1 cup of sugar


Cut the melons in half and with a spoon, carve out the pulp of the fruit and set aside.

In a small pan, combine sugar and water, bring to a boil and let cool off. Refrigerate for at least 2 hours (this is called simple syrup and can be made in advance).

Combine the simple syrup and melon in a blender and process until smooth. Transfer to an ice maker and freeze according to the manufacturer's instructions. Scoop out and fill in the carved out melon shell. Makes 2 quarts.
