3 cups water
3 cups sugar
3 pounds ripe, juicy plums -- halved and pitted
Plum brandy or lemon juice -- optional


Combine water and sugar in saucepan. Stir until sugar dissolves. Boil until syrup spins a thread when dropped into cold water (230-234 degrees on a candy thermometer).

Puree plums in blender and strain, or peel fruit and put through food mill. Combine fruit pulp with sugar syrup (there should be 4 cups). Pour into ice cube trays and freeze 30-40 min.

At serving time pour into stemmed glasses and top with a dash of plum brandy or lemon juice.

Makes 4-6 servings.

NOTES : If mixture becomes too solid (or you wish to store it) before serving, return to blender or beat a few minutes until sorbet is thick and foamy. Should it become too liquid, return to freezer a few min.
