Sour Orange Mojito Sorbet
6 ounces dark rum
1/2 cup mint, finely chopped
1/2 cup sugar
1 1/2 cup fresh sour orange juice
In a small saucepan over a low flame, heat rum slowly for several minutes to evaporate some of the alcohol. Do not boil.
Using a mortar and pestle, mix mint with sugar until it is a paste. In a medium bowl, combine mint mixture with juice, 1 cups water and the rum. Cover and chill three hours. Pour mixture into ice cream maker and freeze according to manufacturer's instructions.
Yield: 8 servings.
