Apple Tart

2 large Golden delicious apples, peeled, cored, thinly sliced
2 Tbl. Fresh lemon juice
1 1/2 tsp. vanilla extract
1 egg
1 Tbl. Milk
1/4 c. sugar
1/2 tsp. ground cinnamon
1 frozen puff pastry sheet, thawed
1/4 c. apricot preserves
Sliced almonds (optional)
Whipped cream (optional)


Preheat oven to 350 degrees.

Mix apples, lemon juice and 1 tsp. vanilla in medium bowl. Beat egg and milk together in small bowl. Mix sugar and cinnamon in another small bowl.

Roll pastry on floured surface to 10-inch square. Make a border along each edge of dough by turning over making a ridge, about 1/2 inch high. Place squares on ungreased baking sheets and brush with egg mixture.

Drain apples. Overlap apples atop pastry. Sprinkle apples and pastry edges with cinnamon mixture.

Bake until crusts are brown, about 30 minutes. Place on rack.

Combine preserves and 1/2 tsp. vanilla in small saucepan. Stir over low heat until melted and smooth. Brush glaze over apples. Sprinkle with almonds if desired.

Serve with whipped cream, if desired.
