2 pkg. lady fingers, split, divided in half
1/2 cup freshly brewed, double strength coffee
4 Tbl. sugar, divided
2 tsp. vanilla, divided
1 container (15 oz.) ricotta cheese
1 1/2 cups heavy cream, whipped
2 tsp. unsweetened cocoa
Arrange 1/2 lady fingers in bottom of 12x8 inch dish.
Mix coffee, 2 Tbl. of sugar and 1 tsp. vanilla. Brush 1/2 of coffee mixture over ladyfingers.
Beat ricotta cheese, remaining sugar and vanilla with mixer until well blended. Gently stir in whipped cream. Spoon 1/2 of ricotta cheese mixture over coffee mixture. Top with remaining lady fingers, brush remaining coffee mixture over lady fingers.
Top with remaining ricotta cheese mixture, sift cocoa powder over ricotta cheese mixture. Refrigerate several hours or overnight.
