Carrot Cake

1 C. Oil
2 Tbsp Granulated Fructose
4 Eggs
1/2C Water
1 tsp Baking powder
1 tsp Baking soda
2 Tsp Cinnamon
1 tsp Nutmeg
1/2 tsp Sale
1/2 C. Chopped Pecans
3 c. Grated Carrots


Beat oil, fructose and eggs until lemon colored. Add water, flour baking powder, soda, cinnamon, nutmeg and salt beating well. Stir in pecans and carrots. Pour into well greased and floured tube pan. Bake at 350 degrees for 30-40 minutes or until it tests done.
